Cosmic Gumbo (6.5% ABV) is a West Coast-Style IPA brewed with 100% malt from the Northeast and with a mélange of unique hops, including Zappa, Styrian Wolf, and Cashmere. The result is a gorgeous, glowing copper-colored, crystal clear IPA with upfront flavors of spicy green herbs, followed by fruity notes of peach, honey, and cantaloupe, ending with a lingering white grapefruit, piney finish. The Northeast grains contribute a backbone of bready flavors that nicely balance the hop bitterness.

Cosmic Gumbo is brewed with 100% Valley Malt with barley sourced from farms in NY & ME, and with wheat from right here in NH! This IPA also uses a couple unique hops, most notable Zappa, originally discovered growing wild in New Mexico, and known for its tropical fruit, spice, and fruity pebble aromas. Cosmic Gumbo also uses Styrian Wolf hops (know for mango and lemongrass aromas), and a heavy dose of Cashmere, which we love for its fruity melon and peach notes.

Where does the name Cosmic Gumbo come from? Brewer Adam likes that the name represents how this beer is an amalgam (or gumbo!) of wild derived US hops, non-noble European hops, and Pacific Northwest hops. The name is also a nod to the Zappa hops from Frank Zappas “Cosmic Debris”, and, finally, it’s a deep cut reference from the “I Think You Should Leave” sketch comedy.
